The "Melting Moments" are typical Australia sweets that are stuffing with butter cream and raspberries jam.
Ingredients for 20 sweets
- 250g flour type 00
- 100g corn starch
- 250g soften butter
- 130g icing sugar
- 1 spoon of vanilla extract
- 6g yeast
For the stuffing:
- 100g soften butter
- 200g icing sugar
- 1 tea spoon of vanilla extract
- rasperries "Più Frutta Light"
- Açai and blueberries "Più Frutta Benessere" jam
In a bowl mix weel the ingredients for the biscuit until you obtain a very soft shortcrust pastry. Make some soft balls of dough (everyone about 4cm). Put them on a baking tray previously cover with baking sheet. Using a fork make some parallel lines over every ball. Cook them in a pre-heated oven to 160°C for about 20 minutes.
Let them cool. In the meantime prepare the filling. Mix the soften butter with the vanilla and the icing sugar until you obtain a liscia e omogenea mixture. Pour the cream into a sac à poche and fill the half of the biscuits. Spread the jam over the other half. Joint the couple of biscuits (one with butter and one with jam). Sprinkle them with icing sugar before serve.
