The No Knead Bread is perfect for the Christamas day, in fact, it request only some minutes of preparation in this way you can spend your time to cook the a special Christamas lunch.

Ingredients


- 300g flour 0 Manitoba

- 200g wholewheat flour 0

- cinnamon

-  black pepper

-  star anise powder

-  cloves powder

-  nutmeg

-  Vis honey

-  3g brewer’s yeast

-   370g lukewarm water

-  12g salt

 

Preparation


Put in a large bowl the flours 1 teaspoon of cinnamon, 1 pinch of star anise, 1 pinch of cloves, pepper and nutmeg. Make a hole in the middle and put salt on the edges. In a small pitcher mix water, yeast and 1 tablespoon of honey and stir until everything is melted. Pour the liquid into the bowl and stir with a fork until the ingredients are mixed (absolutely no kneading). Cover with plastic and let rest overnight at room temperature (12 hours).

 

The next morning, lay a towel on the table, flour it and upset the dough.Flatten it in a rectangle and make folds: put the right corner of the rectangle in the center and cover it with the left corner . Turn the dough of 90°, flatten it again and repeat the folds 2 times . Turn the dough so that the folds are below, flour and cover with a cloth . Let rise about 1 hour. Turn on the oven to 250°c and heat a casserole with its own lid.

 

Put the dough directly in the casserole so that the folds are up, cover with the lid and bake for 40 minutes in the lower part of the oven. Move the casserole in the middle part of the oven and bake 20 minutes more. Remove the lid and bake 10 minutes more.
