These light biscuits are prepared with whole flour, albumens and they are aromatized with lemon and ginger.
- 250g whole flour
- 100g butter
- 150g brown sugar
- 150g albumens
- the rind of 2 lemons
- 1 spoon of ginger in powdered
- 100g lemon, lime and ginger Vis Jam
Pour the butter, the sugar, the ginger in powdered and the rind of 2 lemons into the bowl of a kitchen robot. Mix these ingredients for some minutes and the add the albumens. Then add flour and mix all for some minutes.
Transfer the dough over a working table and work it fastly with you hands. Make a ball, wrap it into a food-film and store in fridge for about 30 minutes.
After this time spread the dough over a table using a rolling pin. Using a dough cutters with a round form cut the shortbread pastry. Take the half of these disks and, with littler round dough cutter, cut a little hole in the middle of everyone.
Transfer them over a baking tray previously covered with a baking paper and cook them in a pre-heated oven to 170° for about 15 minutes. Let them cold and then spread some jam over every every biscuits without hole, then close them with the biscuits with the hole.
