This tart stuffed with elder jam is perfect eaten with a good cup of tea near a fireplace.

Ingredients


For the shortcrust pastry:
- 300g flour type 00
- 150g sugar
- 1 egg
- 150g butter
-  the rind of one lemon (without the white part)
- 1/2 stick of vanilla, only the seeds
- a pinch of salt


For stuffing:
- elder "Natura Golosa" jam

Appropriate equipment:  cake tin with removable bottom
 

Preparation


Preparation of shortcrust pastry

In a bowl mix the flour with the sugar, then add the butter, an egg, the vanilla seeds, the greted rind of one lemon and a pinch of salt. Work fastly the dough.

Transfer the dough over a working table and work it with your hands, then wrap it into a food-film. Let it store in fridge for about 30 minutes.

Complete the preparation of the tart

Put the dough between 2 baking papers and spred it using a rolling pin. Remove the paper from the superior side and put the tart into a cake-tin (conserve some dough to prepare the strips). Hole the surface of the cake with a fork and stuff the cake with the jam. Prepare the strips and dispose them over the jam in order to form a grid.

Cook i a preheated oven to 180°C for about 30-35 minutes. Take out the cake from the oven and let it cold before remove it from the cake-tin.
