The recipe of these biscuits is very easy to prepare, it is not necessary to use a rolling-pin or a biscuit mould and the result is a very soft shortcrust pastry.

Ingredients

- 220g flour type 00

- 100g sugar

- 4g yeast

- vanilla

- sthe grated rind of one orange

- 100g butter in pieces

- 1 egg

Preparation

I a bowl mix the flour with the yeast and the sugar, then add the butter and work them until you obtain a crubled dough. Add the egg, the vanilla and the rind of orange and work all until you obtain a soft ball. Wrap it into a food-film and store in fridge for about 1 hour.

Take out of the fridge the shortcrust pastry and make different little ball with a weigh of 18-20g. Make a little hole over everyone using the handle of a wooden spoon.  Dispone all biscuits over a baking tray previously covered with a baking paper and cook them in a pre-heated oven to 180° for about 15 minutes.

Let them cold, sprinkle them with icing sugar and stuff every hole with some orange marmalade.
